Every season has a special flavor, despite the harshness of the climate by the arctic circle. In springtime, while we wait for nature to flourish again, birds provide us with the eggs that traditionally ensured fresh vitamins and energy after the long winter. The summer opens up first through the herbs and leaves that naturally flavor our food, and later with berries which grow on mountainsides and hillocks all around us. The autumn is a time for hunting and fishing – and harvest from our vegetable gardens.
